Exchange
Advantages:
Widely supported - If, for whatever reason, you decide to leave Lemon Computing, you'll have no trouble finding another IT company who can support your Microsoft Exchange server
Integrates with outlook - Set your Out of Office message, allow others to read your inbox and share your calendar with ease 
Simple to set up for new users - Start up Outlook, enter the name of the server and your username and you're finished! All of your e-mails, reminders and calendar entries will be waiting for you
Disadvantages:
High hardware requirements - Microsoft Exchange is rather inefficient with system resources. Expect to pay for a high-end computer to be able to run it and spiraling costs if you have a large amount of users
Expensive - Besides the cost of the hardware itself, Microsoft Exchange is an expensive package, and has a high per-user fee
Poor support for advanced requirements & needs - Ever had an e-mail just go missing and wondered what's happened to it? With our other e-mail solutions we can track every message sent and tell you to whom it was delivered, what time that happened and if any problems exist. However, with Exchange this cannot easily be performed. Additionally, vital tools such as database recovery software, external e-mail downloads and spam filtering are not provided and usually cost premium prices from third-party vendors
Not using Outlook? - Then you won't be able to use many of Exchange's nicer features
Zimbra
Advantages:
Inexpensive - While not completely free, Zimbra is far cheaper than products such as Microsoft Exchange. Additionally, it's hardware requirements are also lower than that of Microsoft Exchange
Connector Plugin - A plugin that integrates itself with Outlook or Entourage gives excellent performance and allows users to have shared calendars and shared mailboxes
Webmail interface - Zimbra's stylish and powerful webmail interface lets you work wherever you are in the world
Good end-user performance
Based on Linux, so all of the advantages with that (free message tracking, free spam control and other more advanced customizations are possible)
Disadvantages:
New to the market - Zimbra is still a young piece of software and is not as thoroughly tested as Exchange or Exim
Not widely supported - If for whatever reason, you decide to leave Lemon Computing, you may have a little trouble finding another IT company to support Zimbra
Exim
Advantages:
Free - This open-source software is completely free
Highly tested - Used for years in universities, governments and corporations, you can rely on Exim
Highly secure - With no major security problems in seven years, Exim has a proven security track record
Highly configurable - Whatever you need, be it spam filtering, shared mailboxes, distribution lists, reports, email tracking - Exim can do it
Disadvantages:
Webmail - Exim doesn't come with its own webmail. This means a third-party webmail utility has to be installed. The problem with that is it won't integrate as nicely as Exchange and Zimbra do
User experience - Users won't be able to set their Out of Office as easily as they could with Exchange and without functionality like shared calendars, the end user experience is not as friendly with Exim
